Instead of ringing in the New Year with a healthy meal like most everyone does, I decided to go in a different direction. For some reason, I had the desire to make one of my mom’s feel-good recipes, sausage, peppers and onions on a soft hoagie roll. This meal was one of my comfort foods when I was a kid. Even now I can remember exactly how the house smelled when mom was sauteeing all those yummy peppers with onions and garlic.
This is such an easy meal – a one-pot wonder full of flavor and color, and flexible enough to add your own spin on it. For instance, I add mushrooms, or you can add a can of diced tomatoes. If you omit the bread, it’s Keto- and Paleo-friendly.
Old School Italian Sausage, Peppers and Onions
Ingredients
- Olive oil
- 1 package of Italian sausage. Usually four to six links. I prefer sweet sausage, but use your favorite
- 1 large sweet onion sliced in half moons, or more per taste
- 1 large red bell pepper, cut into strips
- 1 large yellow bell pepper, cut into strips
- 1 large orange bell pepper, cut into strips
- 1 large green bell pepper, cut into strips
- 4 cloves of garlic, minced
- 1 carton of white button mushrooms, sliced (optional)
- 1 Tbsp oregano
- 1 Tbsp thyme
- Salt & Pepper to taste
- Soft rolls
Instructions
- Heat a few drizzles of olive oil to a large skillet or dutch oven.
- Add the sausage and brown on all sides on med heat. Don't worry about cooking the sausages through all the way yet. Remove from the pan and place on a plate lined with a paper towel.
- Add sliced onions to the pan saute on medium heat in sausage oil until soft and translucent.
- Add all of the peppers, salt, pepper, oregano and thyme and garlic. Stir often to ensure the peppers cook evenly and the garlic doesn't burn, for about three minutes.
- Add the sausage back to the pan - either whole or slice into half-inch pieces.
- When cooked through, place on toasted roll and serve immediately.
