Ratatouille
Ratatouille is a hearty side dish, even though it is vegetarian. It can be made in the oven or on the stove top. You can add more veggies or different seasonings if you like. Serve it as a main dish with a green salad and toasty, crusted bread.
Ingredients
- 1 can diced tomatoes
- 1 small sweet onion, diced
- 1 large zucchini, diced
- 1 large yellow squash, diced
- 1 small to medium eggplant,diced
- 1 bell pepper, orange or red, diced
- 2 cloves of garlic, diced and smashed
- 1 bay leaf
- 1 Tbsp of tomato paste
- Salt and pepper
- 1 tsp dried Thyme
- 1 tsp dried Oregano
- 1 tsp dried Basil
- Pinch of red pepper flakes
- Olive oil
Instructions
- Drizzle olive oil in a dutch oven or saucepan. Add onion to the pan, sprinkle with a little S&P. Saute on medium heat until soft.
- Dice garlic cloves into tiny pieces. Add a pinch of salt, and with the blade of your knife smear the garlic/salt mixture into a paste. Add to the onions and stir.
- Add bell pepper and saute for a minute. Add the zucchini and squash. Sprinkle with more salt, and add the thyme, basil, oregano and pepper flakes. Saute for 3 minutes to let the spices toast. Add the tomatoes and tomato paste, stir and reduce the heat to low. Cover and simmer until veggies are soft, for about 15 minutes.
- Serve as a main or side dish with crispy bread.
