Sweet potatoes are one of my favorite foods. They are incredibly versatile, they can be roasted, sauteed, boiled, or baked. They are delicious served sweet or savory, and go with just about any seasoning.
One medium sweet potato is about 112 calories. They are high in vitamin A and C, packed with fiber and a slow burning carbohydrate that will not spike your blood sugar.
Sweet potatoes are relatively inexpensive, so they are budget-friendly and healthy. I always have them in my pantry.
Roasted Sweet Potatoes With Sweet Onions

Tips:
– cover the bottom of the baking sheet with foil for easy clean up
– add your favorite seasonings, I like rosemary, oregano and thyme
– roasted sweet potatoes make a delicious mash – add butter, broth or cream and mash
– throw into a blender/mixer with warm broth to make an easy, flavorful soup
Ingredients
- 2 lbs sweet potatoes, peeled and washed
- 1 sweet onion, peeled
- 2 cloves of garlic
- 2 Tbsp extra virgin olive oil
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Preheat oven to 450 degrees
- Cut peeled and washed sweet potatoes into 1 – 2 inch cubes
- Slice sweet onion into 1 inch slices
- Slice garlic cloves into thin strips. You can also dice the garlic if you prefer
- Lay all the ingredients into one layer on a baking sheet or low sided baking dish
- Sprinkle with salt and pepper
- Drizzle with olive oil
- Toss until all pieces are covered with oil.
- Bake for 10 minutes. Turn the potatoes and onions over to make sure all sides cook evenly and don’t burn. If the potatoes look dry, add a little more oil.
- Cook for another 10 – 20 minutes, based on your oven. Potatoes are done when a fork slides into them easily.
- Sprinkle with flaky salt and Parmesan cheese.
- Serve while hot
